Violation of Code: [511-6-1.04(4)(m)] Observed sanitizer wiping cloth being stored on the counter next to the vegetable prep sink in the main kitchen. Cloths in use should be held in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC placed cloth in sanitizer bucket with a chemical sanitizer solution at the proper concentration. Corrected On-Site. New Violation.
