Violation of Code: [511-6-1.04(6)(f)] Observed sprouts, cut tomatoes, sliced roast beef, and swiss cheese in preptop cooler at temperatures 46-52F. Time/Temperature Controlled for Safety (TCS) foods must be cold held at 41F or below. COS: PIC closed preptop cooler lids that had been left open. PIC rearranged food so it would not be mounded. All foods were observed cooling properly. Preptop ingredients had been stocked at 12PM. Corrected On-Site. New Violation.
