Violation of Code: [511-6-1.04(4)(c)] Observed raw fish and shrimp stored in 2-door standing cooler above ready-to-eat menudo and salsa. Raw animals foods must be arranged according to minimum required cooking temperature with the food requiring the highest minimum temperature on the bottom. COS: PIC rearranged items so that raw fish and shrimp were beneath ready-to-eat foods. Corrected On-Site. Repeat Violation.
4-2B Violation of Code: [511-6-1.05(6)(n)] Chemical-sanitizing dish machine observed reaching a maximum of 118F after multiple cycles. The wash temperature for chemical-sanitizing dish machines must be at least 125F in order to effectively clean and sanitize food-contact surfaces. COS: PIC to utilize 3-compartment sink until temperature can be adjusted. Corrected On-Site. New Violation.
