Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed various margarine buckets and oils throughout the kitchen that weren't in use missing a covered lid. Food shall be stored in packages, or lids unless during the cooling process to prevent overhead contamination. COS: PIC placed lids on all open buckets. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed pizza prep pans stored on the shelving across from the 3-compartment sink which were stored right side up. Clean equipment and utensils shall be stored in a self draining position that allows air drying and covered or inverted. COS: PIC changed the way the pans were stored. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(1)(i)] Shelves/Racks located above 3 compartment sink where sanitized utensils are stored and racks located in front of 3 compartment sink where dishes are stored were soiled with built up sticky debris and food particles. Nonfood contact surfaces should be cleaned and sanitized at a frequency to prevent debris build up and contamination. Repeat Violation.
