Violation of Code: [511-6-1.10(5)(c)] Establishment could not provide evidence of training on ROP procedures. Documentation for cooling process was incomplete and not verifiable. HACCP plan requires updates to reflect donations of their ROP products to charitable organizations. PIC unable to demonstrate how to calibrate thermometers. Designated area for ROP needs proper cleaning and sanitizing to prevent the accumulation of build-up and debris. New Violation. 12B Violation of Code: [511-6-1.03(5)(g)] Observed cook preparing food with multiple rings on his fingers. Except for a plain ring such as a wedding band, food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. New Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Observed several damp wiping cloths stored on the prep top surfaces throughout kitchen and beneath prep top racks in dishwashing area. Wiping cloths must be placed in sanitizing solution between uses. COS: Employees returned wiping cloths to sanitizing solution buckets. Corrected On-Site. New Violation.
