Food-contact surfaces must be cleaned at a frequency that prevents that accumulation of mold and debris. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Observed sanitizer with inadequate concentration. Quat sanitizer should register between 150-400ppm. COS: Employee changed sanitizer to read 200ppm. Corrected On-Site. Repeat Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Observed wiping cloths left on prep surfaces. Wiping cloths should be held in chemical sanitizer solution between uses. COS: Wiping cloth placed in sanitizer bucket. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] Establishment does not have quaternary test strips for sanitizer. Establishment must be able to test sanitizer for appropriate concentration. New Violation. Remarks Chemical sanitizing dish machine observed reaching 120F, 50ppm chlorine
