Violation of Code: [511-6-1.05(6)(n)] Observed sanitizer in 3-compartment sink with chlorine concentration less than 10ppm. Chlorine sanitizer must have a concentration of at least 50ppm chlorine. COS: PIC increased chlorine concentration to appropriate level. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed multiple TCS items being held at temperatures above 41F. TCS foods must be cold-held at temperatures at or below 41F. COS: PIC voluntarily discarded of items. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] Establishment uses quat sanitizer for bucket but does not have the appropriate test strips. Test strips should be available for each sanitizer the establishment uses. New Violation.
