Violation of Code: [511-6-1.05(6)(n)] Observed visibly soiled wiping clothes only partially submerged in quat sanitizer with concentration of only 100ppm. Sanitizer concentration for quat sanitizer must be sufficient to manufacturers instructions in order to effectively sanitize food-contact surfaces. COS: PIC changed sanitizing solution to appropriate concentration and replaced wiping clothes. More solution was added so that cloths could be fully submerged in sanitizer. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed multiple TCS items prepped days prior in the 2-door standing cooler that had not been date labeled. TCS items prepped and stored for more than 24 hours must be labeled to indicate the date of preparation and/or the date of disposition not exceeding 7 days with the day of preparation counting as day 1. COS: PIC labeled items appropriately. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed scoop to refried beans placed on a saucer between uses. Utensils used to dispense TCS foods should be placed under temperature control. This can be achieved by leaving the utensil in the food with the handle left outside the food. COS: PIC cleaned and sanitized scoop and placed it in the food. Corrected On-Site. New Violation.
