Violation of Code: [511-6-1.04(6)(f)] Observed cut cantaloupes col holding on the buffet line at 57 degrees Fahrenheit. According to the PIC on duty the cantaloupes were cut (3) hours ago. Ensure all TCS foods are cold held at 41 degrees Fahrenheit or below. PIC placed the cantaloupes in the walk in freezer to rapidly cool them down to 41 degrees Fahrenheit . New violation. corrected on site. Corrected On-Site. New Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Observed baked potatoes on the buffet line at 108 degrees Fahrenheit. Ensure all TCS foods are hot held at 135 degrees Fahrenheit or above. PIC immediately discarded the baked potatoes during the inspection. New Violation. cos Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(i)] Observed chlorine sanitizer solution in a sanitizer bucket with wiping clothes exceeding the maximum concentration allowed. Ensure chlorine sanitizer solution is prepared and maintains a concentration of between 50 - 100ppm. PIC discarded the solution and prepared a new solution that had a concentration of between 50 - 100ppm during the inspection. Repeat violation. cos. Repeat Violation.
