Violation of Code: [511-6-1.04(4)(c)1(iv)] Containers of bulk foods stored without lids and bulk food bags left open in dry storage area. Containers of sauces and spices left uncovered on shelves and cookline. Keep foods covered when stored or between use to protect foods from potential debris or contamination falling into foods. COS- CFSM placed lids on food containers and closed bulk food bags. Discussed option to use clips that have the ability to keep bags securely closed when not in use if desired. Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Food debris and sticky residues along blades and handle-blade connections of knives, cleavers, and chopping utensils stored in clean utensil pan on lower shelf of prep table. Clean food contact surfaces of utensils to sight and touch before sanitizing for storage/reuse. COS- CFSM re-WRS items at 3 compartment sink. Corrected On-Site. Repeat Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Wet wiping cloths left sitting out on equipment, front counters, prep table tops, and cutting boards. Wiping cloths must be stored submerged in a sanitizing solution between uses. COS- CFSM prepared sanitizer bucket to 100ppm chlorine and submerged wiping cloths. Corrected On-Site. Repeat Violation.
