Ready to eat foods prepared in house must be marked with a means to indicate the date of preparation, and must be consumed, sold, or discarded within 7 days, counting the day of prep. COS: Both items were designated with their preparation date, which was in fact within the 7 day limit. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(h),(i)] Dishwasher engaged in washing dishes using water at 93 degrees F. While washing dishes, water must be maintained above 110 degrees F.
