Violation of Code: [511-6-1.04(4)(c)1(iv)] Containers of nuts, sauces, oils, and spices stored uncovered on shelves at wok line. Soups and sauces stored uncovered at steamtable. Keep food covered when stored between uses to protect product from neighboring food splash/drips or other sources of contamination. COS- PIC placed lids on food containers. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Visible food debris and residues along blades and blade/handle junctions of clean knives stored above air dry drainboard. Food residues observed on pans and containers stacked on clean utensil shelf. Clean food contact surfaces to sight and touch prior to sanitizing for storage/reuse. COS- PIC moved dirty utensils to dirty utensil drainboard staging area for re-WRS before use. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Accumulated food residue along interior surfaces and food splatter along interior lid of bulk dry rice storage container. Clean and sanitize food contact surfaces of dry food containers every time container empties and refilled. PIC cleaned and sanitized lid and to clean and sanitize container once remainder of rice used. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Observed PIC clean customer dining tables with wet cloth and spray bottle of soap between customers. Dining tables must be sanitized using an approved procedure (either single use paper towels with sanitizer spray or a clean wet cloth stored submerged in sanitizing solution between uses) between guests. COS- PIC wiped tables with sanitized wet cloth and to incorporate sanitizing into table cleaning procedure from now on. Corrected On-Site. New Violation. 12D Violation of Code: [511-6-1.04(4)(g)] Unwashed raw onions, carrots, and cabbage chopped without first being washed at the vegetable sink. Raw fruits and vegetables must first be washed at designated vegetable preparation sink to remove loose dirt and debris before being cut or sliced. COS- unwashed cut produce voluntarily discarded and PIC discussed with staff correct procedure for washing raw unwashed produce. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No test strips available to check concentration of chlorine sanitizer used for wiping cloth buckets or sanitizing basin at 3 compartment sink. PIC to order chlorine test strips. New Violation.
