Violation of Code: [511-6-1.05(6)(n)] Hot water sanitizing dishmachine not consistently dispensing sanitizer during final rinse. Unit will dispense sanitizer when primed, but not when run without priming. COS: Owner contacted service technician and will sanitize kitchenware/utensils/tableware/equipment using 3-compartment sink until dishmachine repaired. Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Slicer not cleaned properly after last use. Food debris on back of blade, blade cradle and meat holder. After use slicer should be broken down. pre-scraped and food contact parts washed, rinsed and sanitized and rechecked for debris before storage/next use. COS: Owner washed, rinsed and sanitized in place parts of the slicer and took removable parts to the dishmachine. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] 2-door lowboy holding time/temperature control for safety foods inside between 53F - 55F (chicken wings and raw hamburger patties) and ambient temperature above 50F. Time/temperature control for safety foods in cold holding must be held at 41F or below. COS: Per PIC unit is empty at night and was just stocked from walk-in cooler 45 min - 1 hour previous. Chicken wings put back in walk-in cooler (48F after 30 min) and hamburgers being cooked for lunch. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Unsliced portions of turkey luncheon meat and roast beef that were opened and sliced from last Friday per CFSM not date labeled with day of opening and/or discard date 7 days from day of opening. Refrigerated, ready-to-eat, time/temperature control for safety food prepared and packaged by a food processing plant must be marked at the time the original package is opened if the food is to be held for more than 24 hours with the day or date by which the food shall be consumed and/or discard with the day of opening counted as day one and add 6 days. COS: Since CFSM knew meats opened and sliced Friday, the unsliced portions of turkey and roast beef were labeled with a day dot for Thursday as 7 day use/discard date. Corrected On-Site. New Violation.
