Violation of Code: [511-6-1.05(6)(n)] Chemical sanitizer not registering in buckets within main kitchen used for food prep surfaces. Facility is using diluted bleach solution. Chlorine test strip yielded 0 PPM however. Chlorine sanitizer must be maintained between 50-100 PPM. COS: Bucket changed to appropriate concentration. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] 3 Door Merchandiser Cooler holding TCS foods at above 41F. Milk, shell eggs, and raw meat found at ranges of 48-52F (see log). Time and temperature control for safety foods must be cold held at 41F or below. COS: Milk, and shell eggs voluntarily discarded. Raw meat had recently been thawed under water and placed back into cooler less than 4 hours prior. Raw meat was moved to freezer to cool. This cooler should not be used to cold hold any TCS foods in its' current state. However, cooler is permitted for use on whole, uncut produce, fruits, and non TCS foods. Corrected On-Site. Repeat Violation. 16B Violation of Code: [511-6-1.06(2)(r)] Handsink in main kitchen dripping when shut off. Plumbing fixtures must be maintained in good repair. New Violation.
