Inpection Notes

Violation of Code: [511-6-1.03(3)(a)] No Certified Food Safety Manager (CFSM) for this food service establishment. Assistant Manger had expired certification before starting at this location 3-months prior. Must provide proof of registration in an approved food safety training course within 30 days to Hall County EH office. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Most pans stacked on the clean dish rack had wet/dried doo debris inside - sides and corners. After cleaning and sanitizing and before storage, check for cleanliness. Better scrubbing is needed to loosen baked on food inside the pans. Check all the pans and rewash and sanitize as needed. New Violation. 12B Violation of Code: [511-6-1.03(5)(f)] Food employee with painted fingernails (polish) engaging in food preparation. Unless wearing gloves, a food employee may not wear fingernail polish when working with exposed food. COS: Employee was instructed to wash hands and put on gloves before returning to pizza makeline. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(i)] Food employee with beard longer than allowable one half inch. Either a beard guard (restraint will need to be worn) or the beard will need to be trimmed. New Violation. 12B Violation of Code: [511-6-1.03(5)(g)] Food employee wearing rubber bracelet. Except for a plain ring such as a wedding band, food employees may not wear jewelry (including medical information jewelry) on their arms and hands while preparing food. Food employee indicated bracelet is a religious article but it would still be included in exclusion without a variance. Repeat Violation. 13A Violation of Code: [511-6-1.02(1)(d)] Opening inspection posted from February, but last inspection in May. Must post most current inspection in public view. COS: This inspection will be posted. New Violation. 14B Violation of Code: [511-6-1.05(10)(e)1,2,4] Clean and sanitized knives stored behind wire wall rack touching wall soiled with food debris. This section of the wire rack is over the dirty dish compartment of the 3-compartment sink where food debris may be splattered on wall from the washing of soiled kitchenware and utensils. Move storage of clean and sanitized knives to another location away from possible splash. New Violation. 14B Violation of Code: [511-6-1.05(10)(a)] Pans either inverted and stacked wet or stacked wet right side up on clean dish storage rack. Before stacking kitchenware/equipment etc for storage, allow them to air dry. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Baseboard behind 3-compartment sink and vegetable preparation sink has almost completely separated from the wall. Assistant manager indicated repair should be taking place soon - this weekend. A baseboard is need to seal the gap that is exposed where the wall and floor meet. New Violation. 17D Violation of Code: [511-6-1.07(4)(b)] Employees sunglasses, watch, drill and dust pan brush (used to clean flour/crumbs off prep tables on top of open box of bagged pizza sauce. Designate an area away from food/kitchenware/utensils storage and food preparation where personal items/equipment may be stored. Repeat Violation. From conversation with assistant manager, appears there may have been either a reorganization of the existing ownership company or change of ownership. Will contact owner of company to verify whether or not new food service permit will be needed.
