Violation of Code: [511-6-1.06(2)(o)] At beginning of inspection, handwashing sink blocked by tray resting on top of fixture. Handwashing sinks must be accessible at all times for employee use. COS: Tray moved off of handsink. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Wiping cloth bucket on site in dining room for cleaning tables not registering any sanitizer. Solutions using chlorine for sanitizing must be maintained between 50-100 PPM. COS: Bleach added to water to bring concentration within regulations. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Sandwich unit holding all foods at 48F or above (see log). Bowl of raw eggs out on counter at 69F. Salsa on prep table at 70F. Container of cole slaw at front counter at 53F. Time and temperature for safety control foods must be cold held at 41F or below. COS: Consulted with CFSM as to which foods had been out for more than 4 hours. Those foods were voluntarily discarded (i.e. salsa, eggs, and lengua). Other foods were moved to the three door cooler to cool. Sandwich unit in need of recalibration, CFSM's husband will try and fix it tomorrow. Corrected On-Site. New Violation. Correct By: 12/01/2017 14A Violation of Code: [511-6-1.04(4)(k)] The ice machine, ice chest, and sugar container all contain handles that are contacting either ice or food. Must avoid due to potential contamination. COS: Scoops placed upright in respective containers. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No test strips on site for measuring concentration of QAC in three compartment sink. Chlorine test strips not effective to measure QAC. New Violation. Correct By: 12/15/2017 15B Violation of Code: [511-6-1.05(6)(h),(i)] Wash water in three compartment sink measured at 66F. In order to removed greases and dissolve food debris, the wash solution temperature must be maintained at 110F or higher. COS: Sink drained, and refilled with hot water. Corrected On-Site. New Violation. 17B Violation of Code: [511-6-1.06(5)(r),(s)] Garbage collecting beside of dumpster and piling up along the curb due to lack of removal. Garbage must be removed frequently enough to not become a nuisance. Establishment given 4 days to contact management and garbage removal service before code enforcement is involved. New Violation. Correct By: 12/04/2017 17C Violation of Code: [511-6-1.07(5)(f)] Mops seen lying on ground and along outside rim of mop sink. In order to prevent contamination of floors and equipment, mops must be either hung up or placed in a designated spot to dry. COS: Mop heads moved to empty mop bucket. Corrected On-Site.
