Violation of Code: [511-6-1.05(7)(a)1] Knives stored in belt sheaths on hibachi carts and inside knife holders in kitchen have food debris and residue along blades and around handles. Food contact surfaces of utensils must be cleaned to sight/touch and sanitized before storage or reuse. COS- PIC placed knives in dirty utensil staging area to have WRS before use. Corrected On-Site. New Violation.
4-2B Violation of Code: [511-6-1.05(7)(b)] Accumulated slime debris inside nozzle of soda gun at front bar and along baffles and interior surfaces of ice machines. Clean food contact surfaces of equipment frequently enough to preclude accumulations. Soda gun cleaned and sanitized. Ice machines to be dumped for cleaning and sanitizing at end of day per PIC. New Violation.
5-2 Violation of Code: [511-6-1-.04(7)(e)] Dine-in hibachi menus missing consumer advisory asterisks for items served raw or undercooked to customers. The establishment must have an advisory in place which informs customers of menu items containing animal foods offered raw or undercooked from minimum cooking temperatures known to eliminate pathogens. PIC to reprint menus with appropriate advisory markings. New Violation.
