Violation of Code: [511-6-1.05(6)(n)] Chemical sanitizing dish machine not dispensing any sanitizer due to empty supply source. No backup containers available for use at this time. CFSM states that company is planning to deliver more sanitizer in a few hours. Dishes are not able to be washed until then. Corrected On-Site. New Violation. 11A Violation of Code: [511-6-1.04(6)(e)] Pico de gallo housed in lidded pan within walk in cooler not cooling quick enough to meet the requirements. In order to meet cooling parameters, cooling should be done using less quantities of food, in ice baths, uncovered, adding ice as an ingredient, or other effective means. COS: CFSM chose to voluntarily discarded pico de gallo in order to play it safe. Corrected On-Site. New Violation. 17B Violation of Code: [511-6-1.06(5)(k),(l)] Dumpster enclosure covered in standing water starting to seep off of pad and onto ground. Drain is more than likely clogged. Must maintain enclosures in good repair. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Tiles are missing in front of the grill/cookline. Replace tiles to prevent water from pooling. Repeat Violation.
