Violation of Code: [511-6-1.04(6)(f)] Walk-in cooler not keeping time and temperature control for safety (TCS)foods in cold storage at required 41 degrees - temp for (TCS) foods held in cooler extended period of time 46F - 50 F. TCS foods to be cold held must be held at 41F or below. COS: Cooler Technician called and arrived before finished entering inspection - Food Service Establishment had received a large order and door to walk-in cooler had been left open and extended period of time causing unit to malfunction and not turn back on for cooling. Technician turned cooler down - cooler running at 39F. Since delivery at lunch and several items with temps already down a few degrees will let manager monitor. Some items were also put on ice. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(j)] Chemical sanitizing dishmachine wash temperature 97F - 101F. The wash temperature may not be less than 120F for chemical sanitizing dishmachines. COS: Tankless water heater unit temperatures turned up, temperature measured at 147F at dishmachine. May need to look into point source water heater for dishmachine if it cannot maintain the required 120F during all dishwashing. Corrected On-Site. New Violation.
