Violation of Code: [511-6-1.03(2)(m)] No verifiable way to confirm that employees have been trained in their responsibility to report to the person in charge information about their health as it relates to diseases that are most transmissible through food. Per CFSM, employees have not yet been trained on these responsibilities for the updated rules. COS: Provided CFSM with employee reporting agreement as produced by the State of Georgia Environmental Health Office. CFSM will train employees after service today and then have them sign form. Corrected On-Site. New Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Turkey melts created from leftover meat in pass through recorded at 117F-110F. Time and temperature control for safety foods must be at hot held at least 135F or above. COS: Turkey melts had been in unit for less than an hour. CFSM instructed to reheat turkey melts in oven to 165F, which she did. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(1)(a)] Meat grip part of slicer cracked and pitted, allowing for food residue and debris to get caught inside. Food contact surfaces of equipment must be smooth and easily cleanable. New Violation. Correct By: 11/27/2017 15B Violation of Code: [511-6-1.05(3)(h),(i)] Max/min thermometers for hot water sanitizing dish machine all have dead batteries and no replacements available. Must have functioning thermometer for checking dish machine temperature. New Violation. Correct By: 11/27/2017
