Violation of Code: [511-6-1.04(6)(f)] Many time/temperature control for safety foods in makeline cooler across from grill with temps ranging from 51-59 F. TCS foods must be cold held at 41F or below.
COS: Foods voluntarily discarded. Cooler rearranged so that TCS foods are placed in cold spots furthest away from exterior heat coming off the grill. Corrected On-Site. Repeat Violation.
6-1D Violation of Code: [511-6-1.04(6)(i)] Establishment using TPHC for pizza on racks, per PIC, without either a written procedure or time stamp label for when the pizza was removed from temperature control. Foods using TPHC must contain a written procedure explaining that they must be discarded at the end of the 4/6 hour timeframe and also a log or written label to signify when foods began process and when they will be discarded. New Violation.
