Violation of Code: [511-6-1.04(6)(f)] Raw eggs stored in pans on cart, not under temperature control, recorded at 61-71 F. Crab meat stored in pan part of a larger platter kept in cooler measured at 51 degrees at Sushi bar. Time and temperature control for safety foods must be cold held at 41 F or below. COS: Foods voluntarily discarded. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Pot of rice placed above rice cooker recorded at 115/118F after cooling for several hours, per PIC. Time and temperature control for safety foods must be cooled from 135F to 70F in 2 hours or less and to 41F or below within 6 hours total. COS: Rice voluntarily discarded. Corrected On-Site. New Violation. 10D Violation of Code: [511-6-1.04(7)(c)] Foods stored in bulk containers both in walk in cooler and underneath prep surfaces in main kitchen were not labeled with their contents. Other than foods that are unmistakably recognizable, foods and ingredients stored in bulk containers must be labeled with the common name of the contents. COS: PIC labeled the containers with common name of food. Corrected On-Site. New Violation. 12A Violation of Code: [511-6-1.04(4)(r)] Bags of sugar with paper case stored in room with washing machine, chemicals, water heater, and mop sink. Foods are not to be stored in mechanical rooms in order to protect from possible contamination. COS: Sugar moved to separate room. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(i)] Several employees engaging in food preparation seen at beginning of inspection without any form of hair restraint. Employees working in food preparation must have on an approved hair restraint at all time. COS: Employees all donned hats. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Scoops in food products such as fried toppings stored with handle buried in food. Many bulk storage containers also had bowls in use as scoops. Bowls and the handle portion of scoops are not allowed to be stored in foods. COS: Scoop placed on edge of food. Bowls removed. Corrected On-Site. Repeat Violation. Violation of Code: [511-6-1.05(1)(a)] Cardboard boxes being used to hold washed and cut broccoli. Food contact surfaces of equipment must be durable, and nonabsorbent. COS: Broccoli moved to separate container. Boxes no longer to be used. Corrected On-Site. Sanitizer dispenser above 3 compartment sink leaking when water turned on. Plumbing systems must be maintained in good repair. New Violation.
