Violation of Code: [511-6-1.04(6)(f)] Raw eggs stored in pans on cart, not under temperature control, recorded at 61-71 F. Crab meat stored in pan part of a larger platter kept in cooler measured at 51 degrees at Sushi bar. Time and temperature control for safety foods must be cold held at 41 F or below. COS: Foods voluntarily discarded. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Pot of rice placed above rice cooker recorded at 115/118F after cooling for several hours, per PIC. Time and temperature control for safety foods must be cooled from 135F to 70F in 2 hours or less and to 41F or below within 6 hours total. COS: Rice voluntarily discarded. Corrected On-Site. New Violation. 10D Violation of Code: [511-6-1.04(7)(c)] Foods stored in bulk containers both in walk in cooler and underneath prep surfaces in main kitchen were not labeled with their contents. Other than foods that are unmistakably recognizable, foods and ingredients stored in bulk containers must be labeled with the common name of the contents.
