Violation of Code: [511-6-1.05(7)(a)1] Food debris and film present on food contact surfaces of clean utensils stored above prep table across from veggie sink and clean utensil rack beside warewashing machine. Clean surfaces to sight and touch before sanitizing for storage/reuse. PIC held utensils from use and to have deep surfaces deep cleaned/detailed before sanitizing/reuse. New Violation. 15C Violation of Code: [511-6-1.05(7)(d)] Interiors/exteriors of coolers and equipment have accumulated food debris. Exterior handle areas of bulk food containers have accumulated residues. Wire shelving racks have debris and sticky to the touch. Clean non-food contact surfaces of equipment frequently and thoroughly enough to preclude accumulations. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Accumulated dust/debris along ceilings, walls, and wall attachments in back kitchen areas. Clean physical facilities as often as necessary to prevent potential contamination of food and prep areas. New Violation. Remarks Wash/Rinse 124F, Chlorine 100ppm.
