Violation of Code: [511-6-1.05(10)(e)1,2,4] Dishes kept at self service buffet, beside prep top cooler, and on roller racks in main kitchen not covered or inverted to protect from contamination. Dishes found face up in roller rack with glass shards and other contaminants. Clean dishes and utensils must be covered or inverted. COS: Dishes removed that had debris and placed with other dirty dishes. Other dishes were removed because service had ended. Must cover dishes in the future. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No irreversible registering thermometer or indicators available for measuring utensil surface temperature of hot water mechanical warewashing machine. All facilities that use these are required to have one available. New Violation. 17C Violation of Code: [511-6-1.07(5)(f)] Mop left drying on ground beside ice machine. Separate mop head drying on plastic yellow cupboard. After use mops must be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. COS: Mops picked up and placed on mop rack Corrected On-Site. New Violation. Remarks Maximum temperature recorded on hot water sanitizing dish machine: 165F
