Violation of Code: [511-6-1.04(6)(e)] Just cut deli sliced cheese stacked together and wrapped tightly in plastic wrap not effectively cooling over a 45 minute assessment. Proper cooling methods should be used to cool ambient temperature foods down to 41 in 4 hours. Those methods can be: smaller portions, less wrappings, ice baths, cooling in the freezer, or other effective means. COS: Cheese unwrapped some to possibly allow for quicker cooling. PIC informed of need to monitor cheese for temperature drop over the next hour and then make the appropriate changes. Food left out of temperature after 4 hours must be discarded or withheld from sale. Corrected On-Site. New Violation. 12A Violation of Code: [511-6-1.04(4)(q)] Deli meats stored in walk in cooler sitting under leaky condenser. This is a non-potable form of water and cannot be in contact with food. Foods must be stored in a location that is not exposed to splash, dust, or other contamination. COS: Meats moved to opposite side of cooler where leak does not exist. Must address leak to avoid possible contamination of foods Corrected On-Site. New Violation. 17B Violation of Code: [511-6-1.06(5)(k),(l)] Garbage dumpster rusted through exterior in front bottom right corner causing ants to congregate around hole and on ground. Receptacles for refuse must be maintained in good repair. Correct by Oct. 7 2017 New Violation. 17D Violation of Code: [511-6-1.07(5)(j)] Employee cellular phone stored on prep table beside slicer. Employee personal items must be stored in designated areas to prevent possible foodborne contamination. COS: Phone was moved to designated area Corrected On-Site. New Violation.
