Violation of Code: [511-6-1.04(4)(c)1(iv)] Two containers of pizza sauce stored in walk in cooler uncovered. Per PIC, items were prepared yesterday. When not cooling, foods must be covered to protect from overhead contamination. COS: PIC provided lids for both containers Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Bottom of bread retarder with an accumulation of food debris from the night before. PIC stated it is responsibility of employees closing to keep that surface clean. Non-food contact surfaces of equipment must be kept free of an accumulation of food residue, and other debris. Repeat Violation.
