Violation of Code: [511-6-1.03(5)(j)1&2] Employee water bottle found in main kitchen on top of icing container. The only employee drinks that are allowed in food preparation areas must be in a single service cup with a secure lid and straw. COS: Water bottle moved to designated area Corrected On-Site. Repeat Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] All TCS items in reach in cooler labeled with 8 day disposition date. Ready to eat TCS foods must be labeled with a 7 day discard date, with the day of prep, or opening of container counting as day 1. COS: PIC relabeled all date labels on food containers with a 7 day discard date Corrected On-Site. New Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Cloths used to wipe prep tables found on counters and not fully submerged in bucket of appropriate chemical sanitizer. Between uses, cloths must be stored in a chemical sanitizer solution at appropriate levels to control the growth of bacteria. COS: Wiping cloths moved to bucket Corrected On-Site. Repeat Violation. 17B Violation of Code: [511-6-1.06(5)(k),(l)] Dumpster missing half of lid. All outdoor receptacles must be covered with tight fitting lids and doors. Correct by 9/27/17 New Violation.
