Violation of Code: [511-6-1.05(6)(n)] Concentration of several sanitizer buckets recorded at above 200PPM. Chlorine must be at approved concentrations between 50-200PPM to safely achieve sanitation COS: Water added to buckets to dilute concentration to 200PPM Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Vegetable slicer found with dried food debris still on blade and around components. Food contact surfaces must be cleaned to sight and touch before next use. COS: Slicer cleaned at the 3 compartment sink Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Raw chicken, and fish held in top of Preptop unit beside fryers recorded at temps of 52-53 degree Fahrenheit. Time and temperature control for safety foods must be cold held at 41 degrees F or below. COS: Foods voluntarily discarded. Ice bath to be set up to allow for holding of foods in top of unit. Corrected On-Site. New Violation. 16B Violation of Code: [511-6-1.06(2)(r)] Rinse sink located next to warewashing machine leaking water at the bottom of the basin. Dirty dish water collecting on floor underneath. A plumbing system must be maintained in good repair. New Violation. Remarks Back door in process of getting repaired to shut tightly
