Violation of Code: [511-6-1.04(6)(f)] Eggs left out by grill from the morning, reached temperature above 41 F. Temperature was 72 F. Chorizo also left by grill had reached 84 F COS:Eggs and chorizo voluntarily disposed of by owner. Discussed time as a public health control for both items. TPHC procedure written during inspection. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(g)] Food Handler wearing watch and bracelet while cooking. PIC asked food handler to remove watch and instructed them to not wear anything on hands or arms besides plain band or ring that is easily cleaned. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(i)] Food Handler with beard longer than allowable half inch. Asked to wear beard guard or to trim beard. New Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Wiping cloth stored under grill instead of in sanitizer bucket. Between uses cloths used to wipe food contact surfaces should be stored in container of sanitizer. COS: PIC had cook set-up container of sanitizer for cloth storage. Corrected On-Site. New Violation. 12D Violation of Code: [511-6-1.04(4)(g)] vegetable sink stacked with dirty dishes. The only use for the vegetable sink is for the washing and preparation of fruits and vegetables. Kitchen is very small, but place to stack soiled dishes away from food/food handling area is needed. New Violation. 14B Violation of Code: [511-6-1.05(10)(e)1,2,4] Utensils stored above mop sink. Risk of contamination via dirty mop water. Asked owner to store clean utensils in another place. New Violation. Remarks Discussed deterioration of epoxy flooring - has been working in bids to replace w/tile.
