Food contact surfaces of equipment must be cleaned at a frequency necessary to prevent the build up of dirt and debris. COS: Can opener washed, rinsed, and sanitized. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Tray used to hold clean utensils contained dirt and crumbs on the bottom.
