Violation of Code: [511-6-1.03(5)(j)1&2] Food handler had open Red Bull can drink on shelf over prep table where portioning of mayonnaise was taking place. Drinks can be in the kitchen in single-service cups (disposable) with secure lids and straws and stored to prevent any possible contamination. COS: Food handler moved drink can out of prep area. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Cheese sauce cooling from last night in large lexan container with temperature of 52F. Cooling must be accomplished from 135F to 70 in 2 hours and from 135F to 41 within a total 6 hours. COS: Discussed ways to cool quicker such as ice bath or splitting product into smaller containers. Voluntarily discarded cheese sauce. Corrected On-Site. New Violation. Remarks Pavilion bar on same permit - not inspected today - closed - opens in late afternoon.
