Violation of Code: [511-6-1.04(6)(e)] Sliced lettuce in walk in cooler cooling very slowly in containers tightly wrapped in plastic. In order to cool foods prepped at room temperature to 41F or below in 4 hours or less, cooling should be done uncovered, in ice baths, or with other effective means. COS: Plastic wrap removed and containers of lettuce moved to freezer to cool. Temperature later recorded at 43F Corrected On-Site. New Violation. 13A Violation of Code: [511-6-1.02(1)(d)] Most recent inspection score of 87 posted in dining room but could not be found in drive thru windows. At least the top third of the most recent inspection report must be displayed at the drive thru for establishments that have them. COS: PIC photocopied the most recent inspection and posted it at drive thru Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(j)] Max temperature recorded on spray type chemical warewasher recorded at 111F after 4 cycles. Minimum temperature must be at least 120F for these machines. COS: Hot water heater adjusted, max temperature of machine later recorded at 124F Corrected On-Site. New Violation. 17B Violation of Code: [511-6-1.06(5)(n)] Door to one dumpster left open, and another with the lid open allowing flies to congregate around trash. Garbage receptacles kept outside the establishment must be kept covered with tight fitting lids and doors when not in use. New Violation.
