Violation of Code: [511-6-1.04(4)(c)] Repackaged chicken and vacuum sealed whole cuts of beef thawing in same bus tub in walk-in cooler and chicken liquid has dripped into bottom of bus tub where sealed cuts of meat are laying. To prevent cross-contamination of meats they must be stored either in separate containers or stored on shelving according to cook temperatures with the raw meat requiring the highest temperature (chicken) stored on the bottom shelf. COS: Chicken left in the bus tub, the vacuum sealed meat packages washed and sanitized and stored in another container. In freezer repackaged bags of chicken stored with repacked bags of salmon and repacked bags of cheese. to prevent cross contamination , store repackaged (not commercially sealed) meats and fish according to cook temperatures or in separate respective containers and eady to eat foods above or in a separate container from raw meat. COS: All raw meats/cheese separated into separate containers. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(o)] Medications ( bottle of pain reliever, box of cold and flu medication stored on shelf above 3-compartment sink with equipment/utensils. Medications that are in a food service establishment for the employee's use need to be stored to prevent contamination of food, food contact surfaces and equipment. COS: Medications moved by CFSM to first aid kit stored in restroom. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(b)] Unlabeled spray bottles of chemicals in bins under 3-compartment sink. spray bottles filled with chemicals from a bulk supply or chemicals mixed for use in spray bottles, the spray bottles must be labeled with the contents (chemical) to ensure proper chemical are used for the correct procedure and in case of accidental poisoning. COS: Bottles were labeled with a permanent marker by CFSM. Corrected On-Site. New Violation. 12A Violation of Code: [511-6-1.04(4)(q)] Vegetables delivered yesterday still in the boxes on floor in walk-in cooler. Deliveries need to be stored properly (6" off the floor as soon as possible to prevent any possible contamination. COS: Employee properly stored delivered items on shelves in walk-in cooler. Corrected On-Site. New Violation. Remarks This facility used to store and prepare food items for owner's restaurant a few blocks away. The only food preparation that takes place on a daily basis is baking.
