Violation of Code: [511-6-1.04(4)(c)1(iv)] Containers of pork fat used for cooking carnitas and chicken broth in walk in stored uncovered and directly underneath condenser unit. Foods must be protected from possible overhead contamination by storing with wrappings or lids unless in the process of cooling. COS: Lids supplied and placed on top of containers Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Salsa prepared from room temperature ingredients around 10AM per CFSM found at 47F and 46F within merchendiser cooler. Time and temperature control for safety foods must be cooled from room temperature to 41F or below within 4 hours COS: Salsa voluntarily discarded. Ice baths to be utilized longer to assist with temperature drop before placement for use/storage Corrected On-Site. New Violation. 16B Violation of Code: [511-6-1.06(2)(r)] Hot water faucet at hand sink used by food handlers and dish washers was found to be leaking, so faucet was shut off. Hand sinks plumbing must be properly functioning to supply hand sink with required 100 degree F water for hand washing. COS: Hand sink between kitchen and wait station can be used until kitchen hand sink repaired. Corrected On-Site. Repeat Violation.
