Chlorine sanitizer must be maintained between 50-100 PPM at room temperature and should be changed when cloudy. COS: New sanitizer solution prepared that tested at 100 PPM. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Cooked shrimp, cream cheese, and egg rolls in walk in cooler found at 46-47F. Time and temperature control for safety foods must be cold held at temperatures of 41F or below. Have walk in cooler checked by service provider. COS: Foods out of range were voluntarily discarded. Corrected On-Site. New Violation. 10D Violation of Code: [511-6-1.04(4)(d)] 5 bulk storage containers housing unidentifiable white substances in rear shelving area unlabeled.
