Violation of Code: [511-6-1.05(7)(a)1] Chemical sanitizing warewashing machine was not dispensing sanitizer. Chlorine sanitizer must be present (50-100ppm) to properly sanitize dishware. Repeat violation. COS- Three compartment sink must be used until machine is repaired. Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Ice machine had heavy residue of mold buildup. Clean machine frequently enough to prevent mold growth. COS- Ice was dumped from machine and employee cleaned the equipment thoroughly. Corrected On-Site. New Violation.
