Violation of Code: [511-6-1.05(6)(n)] 3-compartment sink set-up for dishawashing with no detectable sanitizer in sanitizer compartment supplied by automatic dispenser. Appears bottle of sanitizer empty. COS: Chlorine added to sanitizer compartment for sanitizer (100ppm)until another bottle of QUAT sanitizer can be obtained. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] 2-door sandwich unit not working so time and temperature control for safety foods being held in ice bath, but containers to full and ice mostly melted so food temperatures above required cold holding temperature of 41F - beef cheese 51F, Queso loroco 53F, Queso 53, beans and cheese 59F - 63F. Sliced tomatoes and salsa on ice with temps 44F - 54F. COS: Beef and cheese in ice 2 hrs - amount of product split in half and half to walk-in cooler and other half in ice bath that surrounds container to top, Queso loyolo, Queso and beans and cheese out 3 1/2 hours - voluntarily discarded. Sink containers all the way down into ice and do not keep such large amounts of product out at one time. Salsa and sliced tomatoes less than 2 hours - added more ice around containers. Beef and cheese not cool after 4 hours - 49F - 63F voluntarily discarded. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Chicken cooked 2 hours previous in tight lidded container on prep table cooling with temperature of 109F. Time and temperature control for safety foods to be cooled for storage must cool from 135F to 70F within 2 hours and from 135F to 41 within a total of 6 hours. COS: Discussed cooling procedure with PIC (owner) - chicken voluntarily discarded. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(h)] Cooked pork, cooked chicken, barbacoa (no date on container)with dates of preparation past 7 days by which food prepared in and held in a food service establishment must be consumed, sold or discarded. COS: these food items voluntarily discarded. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No sanitizer test strips available for the automatically dispensed sanitizer being used at 3-compartment sink and cloth storage containers. Using QUAT tablets - need to purchase QUAT test strips. COS: have chlorine test strips and bleach so will use bleach in 3-compartment sink and cloth storage buckets until QUAT test strips are purchased. Corrected On-Site. New Violation. Remarks Owner has signed up to take Certified Food Safety Manager's course with Hall County EH. The company previously signed up with canceled the course several times since permit issued.
