Inpection Notes

Violation of Code: [511-6-1.05(7)(a)1] Accumulated dough debris and food residue on stored bread forms. Dried cucumber and onion debris on blade and food contact attachments of veggie slicer. Clean utensils to sight and touch before sanitizing for storage/reuse. COS- PIC re-WRS slicer and presoaking bread forms to prep for re-WRS. Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] No sanitizer registering on quat test strips for sanitizing sink basin at 3 compartment sink. Quat solution must maintain a concentration according to the manufacturers requirements (150-400ppm). COS- Discovered sanitizer container placed in furthest holster where dispensing tube could reach only halfway into container, solution was level with end of tube. PIC switched sanitizer with detergent holster where dispensing tubes reached bottoms of both containers. Sanitizer primed and now dispensing 150-200ppm on test strips,sink refilled. Recommend having unit calibrated to dispense quat at 400ppm to allow for a better range of use before solution dissipates to below 150ppm and requires changing. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Dining tables are being cleaned with multi-surface glass cleaner between customers. Dining tables must be cleaned and sanitized after each use by one of the following methods: 1.) A two step method in which one cloth, rinsed in sanitizing solution is used to clean food debris from the surface and a second cloth in separate sanitizing solution is used to rinse; or 2.) A sanitizing solution is sprayed onto the table and the surface is then wiped clean with a disposable towel. COS- Fresh quat sanitizing wiping bucket prepared and tables wiped down. Corrected On-Site. New Violation. 17D Violation of Code: [511-6-1.07(5)(j)] Employee purse hanging on hook with bag of red onions, cell phone on shelf where clean utensils are stored, and other misc. personal items on shelves in dry storage area. A space designated for the storage of employee personal belongings must be provided in an area that does not potentially contaminate foods, food prep surfaces, clean utensils, or single service items. COS- PIC moved items to a separate shelf. Discussed providing lockers, cubbies, shelving or wall hooks away from food prep/storage areas as alternative options for storing employee items. Corrected On-Site. New Violation. Remarks Wash sink basin currently cannot hold water per PIC- using 2nd basin to wash and spray rinsing over 1st basin then using 3rd basin to sanitize until repaired. Have repaired with 10 days so sinks can be used in intended order for WRS.
