2-2D Violation of Code: [511-6-1.06(2)(o)] Hand sink in salad prep/dishwashing area blocked - several stacked bus tubs sitting on top of the sink. This is hand sink accessible to wait staff to wash hands after busing tables, dishwasher to use between loading soiled tableware/kitchenware/utensils and putting up clean and sanitized tableware/kitchenware and utensils, salad prep personnel to wash hands before putting on gloves to prepare salads and bar staff to wash hands. The other hand sink is on the other end of the kitchen where these employees would have to cross through narrow cook area to reach. This sink must remain accessible for use. COS: Bus tubs removed. Corrected On-Site. New Violation. 4-2B Slicer used yesterday to slice roast beef and left with dried food debris on knife (blade) and dried food debris accumulated in crevices of slicer. After use equipment should be cleaned and sanitized - especially to prevent attraction for insects/rodents. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(c)] Can of RAID flying insect spray stored above in cubby above hand sink slightly over prep table. Chemicals must be stored to prevent any possible contamination of food, equipment, utensils, linens, and single-service and single-use articles. COS: Can of Raid moved out of kitchen. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(j)] Chemical sanitizing dishmachine wash temperature not reaching required 120F. Machine run multiple times and wash temperature only reaches 120F. Restaurant in process of changing out water heaters. Owner to contact plumbers to finish installation so dishwasher will be able to reach 120F wash temperature so grease/food debris is removed properly to allow chemical sanitizing to be effective. New Violation. 18 Violation of Code: [511-6-1.07(5)(k)] Still evidence of rodent activity in kitchen - around bag-in-the-box storage area and under dishmachine. To monitor activity keep all areas clean in order to evaluate whether or not controls are effective or not. All windows to outside are open allowing for insect entry and since no solid door to kitchen, flying insects have entered kitchen. A better control for insect entry into the kitchen is needed - such as a solid door. New Violation.
