15A Violation of Code: [511-6-1.05(4)(b)] Seals for handwashing sinks deteriorated and peeling from wall or splashguard seams causing areas to hold moisture and residues. Scrape damaged/missing caulking and replace as needed to restore a smooth and easily cleanable surface. New Violation. 15C Violation of Code: [511-6-1.05(7)(d)] Accumulated sticker residue from date labels observed on the top non-food contact corners of multiple food containers. Ensure all residues are removed from utensils when cleaned. Accumulated food debris and residue along bottom (fallen under the drawers) of grill cooler, and along door seals, hinges, and lids of cookline equipment. Clean equipment frequently and thoroughly enough to keep rid of accumulations. Repeat Violation. Remarks: Wash 167F, Rinse 184F, Surface 164F Quat Spray 300ppm Quat Buckets 20-300ppm Establishment receives key drop deliveries- GM in process of retrieving delivery contract to forward to Health Authority. Key drop rules and requirements furnished to GM- to maintain records for review during inspections. Warewashing machine at bar not operating at time of inspection, service call made earlier in the week, bartender using 4 compartment at bar in the interim. Cooling chicken breast 183F at 10:35am per cooking/cooling records.
