2-1B Violation of Code: [511-6-1.03(5)(c)] Observed food employee leave kitchen and upon returning to cookline, employee donned gloves to assemble ready-to-eat foods without first washing hands. Observed food employee touch glasses, ear buds, or face while in the process of donning gloves to handle foods at cookline. Food employees must wash their hands immediately before donning gloves to initiate a task that involves working with food and after touching bare human body parts or other activities can contaminate the hands. COS- CFSM discussed with employee, hands washed and clean gloves donned. Recommend CFSM provide additional handwashing and glove use education to staff and coach food employees for compliance. Corrected On-Site. New Violation. 12A Violation of Code: [511-6-1.04(4)(q)] Observed Foods stored under accumulation of non-potable ice dripping at evaporator fan in walk-in freezer- broken ice on tops of opened food boxes and containers. Keep stored foods protected from contamination by placing in clean, dry locations not exposed to drips or splash. COS- CFSM voluntarily discarded foods potentially contaminated from ice. CFSM to not store foods under leak until repaired. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(i)] Observed food employee assembling plates of ready-to-eat foods on cookline without a hair restraint. Employees must wear a hat, hairnet or other suitable restraint when handling exposed foods. COS- CFSM furnished employee with a hair net. Corrected On-Site. New Violation. Remarks: Wash 140, Chlorine 100ppm. Discussed methods employees use to inspect utensils for cleanliness. Discussed methods used to track cooling progress of foods- if going by time stickers please verify accuracy of time labeling practices- 14 speed racks in walk-in all had the same prep time of 10:36am.
