6-2 Violation of Code: [511-6-1.04(6)(g)] Salad in the WI cooler was dated with a 10 day discard window, tomato paste was past the discard date. Several other items were dated with an 8 day window. TCS foods must be date marked and discarded within 7 days of the preparation/opening date, including the date of preparation/opening. COS- Manager correctly marked items and voluntarily discarded product that had exceeded 7 day period. Corrected On-Site. New Violation.
