4-2B Violation of Code: [511-6-1.05(6)(n)] Sanitizing buckets set up at table wiping station did not register as having any sanitizer when tested with a quaternary ammonium kit. CFSM said the kitchen staff does not monitor those buckets. Informed CFSM that since the buckets are used on tables as part of cafeteria seating, they are the responsibility of the food service establishment. A chemical sanitizer used on food contact surfaces for mechanical or manual operation must be between 100PPM-400PPM for a quaternary ammonium compound. COS: CFSM was able to refill the buckets to a concentration of 200PPM. Corrected On-Site. New Violation. Remarks: High temperature sanitizing dish machine wash temperature: 162F; 20PSI
