1-2B Violation of Code: [511-6-1.03(3)(a)] There has not been a Certified Food Safety Manager on staff since this food service establishment was opened almost 2 years ago. Manager has taken the class and has taken the exam a couple of times and not received a passing score. Given 30 days from last inspection to retake and pass an accredited CFSM exam to fulfill the requirement. Hall County Environmental Health Department offering a ServSafe Exam Only date April 18. Repeat Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] 2-door glass front cooler keeping time and temperature control for safety food items above required 41F for cold holding. Ambient temperature 48F - 54F. Items prepared from lunch not going to be able to cool to 41F or below if unit cannot keep temperatures at 41 degrees or below. All time and temperature control for safety foods cooling in this cooler need to be put on ice to cool as required and store on ice. If unit cannot maintain these food items at 41 degrees or below, it must be replaced COS: Manager moving all time and temperature control for safety foods to 1-door merchandiser and only keeping vegetables in 2-door merchandiser to see if unit can be serviced. Corrected On-Site. Repeat Violation.
