4-2B Violation of Code: [511-6-1.05(7)(a)1] Black mold found around the chute of the ice machine. On Monday, ice machine was cleaned, however manager was unaware of his duties to clean referenced region of the machine. Machine Equipment food contact surfaces must be clean to sight and touch. COS: CFSM took a sanitized rag and wiped the surface free of black residue. Corrected On-Site. New Violation. 14B Violation of Code: [511-6-1.05(10)(a)] Lexan containers stored on clean ware shelving stacked to prevent air drying of food contact surfaces. Equipment after cleaning and sanitizing must be air dryed or adequately drained before contact with food. COS: CFSM untacked lexan containers to allow proper air flow for drying Corrected On-Site. New Violation.
