1-2B Violation of Code: [511-6-1.03(3)(c)] CFSM certificate kept posted in manager office area. A CFSM certificate must be posted in public view in each food service establishment. COS: PIC moved current CFSM certificate to front counter area where permit and inspection are posted. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Observed heavy build up of mold inside ice machine around the edge of ice chute. Also rust build up on the interior roof of ice machine. Food contact surfaces should be cleaned frequently enough to prevent build up. Manager stated they are looking to replace the machine and the build up was cleaned. COS: PIC wiped slime away with a sanitized cloth Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Prep slicer used this morning and cleaned after use contained a buildup of lettuce and food particles behind the blade guard. Food contact surfaces should be kept clean to sight and touch. COS: PIC disassembled prep slicer and set aside to be washed, rinsed, and sanitized. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Ceiling of fry equipment contained a heavy buildup of dangling food residue and other debris stored in close contact to where the fry tongs are being stored. Noon food contact surfaces of equipment must be kept free of dust, dirt, food residue, and other debris accumulations. New Violation. 17B Violation of Code: [511-6-1.06(5)(o),(p)] Dumpster missing a drain plug. All drains in dumpster must have drain plugs in place. New Violation.
