2-2B Violation of Code: [511-6-1.03(5)(j)1&2] Styrofoam cup with drink without secure lid or straw and sitting on cutting board at sandwich unit. Drinks may be in the kitchen if in single-service cups (disposable - such as Styrofoam) with a secure lid and straw and stored to prevent any possible contamination of food/food contact surfaces.
COS: Drink cup was moved by CFSM to personal table at front counter. Corrected On-Site. New Violation.
6-1A Violation of Code: [511-6-1.04(6)(f)] Cheesecake prepared on-site and kept on domed cake plate at front counter for service. Cheesecake is a time and temperature control for safety food and must be held for service at 41 degrees or below.
COS: The few leftover pieces of cheesecake were voluntarily discarded by CFSM. Corrected On-Site. New Violation.
6-2 Violation of Code: [511-6-1.04(6)(h)] Cheese dip past 7 day discard date from date of preparation label. Menudo not labeled with date of preparation and/or 7 day discard date.
COS: Cheese dip voluntarily discarded by CFSM and menudo made yesterday per CFSM and labeled during inspection. Corrected On-Site. New Violation.
6-2 Violation of Code: [511-6-1.04(6)(g)] Most food items prepared in advance and frozen and thawed in walk-in cooler for use, but dates on containers do not reflect a thaw date to follow 7 day discard date from preparation.Provide date on containers that product removed from freezer in order to be able to follow 7 day discard date. New Violation.
15A Violation of Code: [511-6-1.05(6)(a)] 2-door sandwich unit with right door gasket damaged - ripped and condensate leak inside allowing water to pool inside on right. replace door gasket so door is sealed to keep cold air in unit and have unit serviced to find source of condensate. Repeat Violation.
