4-2B Violation of Code: [511-6-1.05(6)(n)] Quat sanitizer solution in three compartment sink measuring less than 100 ppm, temperature of solution was recorded at 60F. Through discussion learned PIC was unaware that solution needs to be made using warm water. Quaternary ammonium solutions must register between 100-400ppm and have a minimum temperature of 75F. COS: Existing solution drained and new quat tablets were added to warm water. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Tomato slicer stored with clean equipment found to contain existing debris between the blade. Pan found in stack of cleaned pans with a globular substance appearing to be cheese. Food contact surfaces of equipment must be clean to sight and touch. COS: PIC scrubbed between the blades of the slicer. Both items were then washed, rinsed, sanitized until clean to sight. Corrected On-Site. New Violation. Remarks Manager Sean Allardice states prior CFSM no longer employed at store. Sean Allardice signed up to take ServSafe class with Hall County Environmental Health on 3/21/2017 in his place to fulfill the requirements of 511-6-1.03(3)(a)
