4-2A Violation of Code: [511-6-1.04(4)(c)1(iv)] Containers of bulk foods stored without lids being secured back in place in dry storage area. Containers of sauces and spices left stored uncovered on shelves in food services areas. Bulk bags of rice stored with mouths of bags left open in dry storage area. Keep foods covered between uses and when stored to protect foods from potential debris or contamination falling into foods. COS- CFSM snapped lids back into place on containers and used plastic wrap to cover foods without tight fitting lids. Discussed the option to use clips that have the ability to keep bags securely closed when not in use if desired. Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Accumulated food debris and residue on clean pans and containers stored on shelves above 3 compartment sink and speed rack. Ensure food contact surfaces of utensils are cleaned to sight and touch before sanitizing for storage/reuse. COS- CFSM moved items in dirty utensil staging area at compartment sink for re-WRS, CFSM to retrain employees on proper method for inspecting utensils for food debris and proper removal when cleaning. Corrected On-Site. Repeat Violation. 8-2B Violation of Code: [511-6-1.07(6)(c)] Spray paint,open calking gun, and liquid wrench stored in open cardboard box of misc. tools and supplies on lower shelf of prep table amongst clean utensils. Poisonous and toxic materials must be stored separately to where they cannot potentially contaminate foods and clean utensils. COS- spray paint discarded, liquid wrench and caulking gun were used to seal equipment/splashguard (project now finished), CFSM moved items to chemical shelf for temporary storage and to take home at end of day. Corrected On-Site. New Violation. Remarks Wiping Buckets 100ppm Chlorine.
