4-1A Violation of Code: [511-6-1.04(4)(c)] Packages of ground beef stored above raw beef steak in walk in cooler. Through discussion with the CFSM, food service establishment was unaware of proper procedures regarding storage of items according to cooking temperatures to prevent cross contamination. Raw meat must be stored with lowest internal cooking temperature on top (raw beef steak-145F) and higher internal cooking temperature beneath (ground beef-155F). COS: CFSM rearranged raw foods in walk in to correct internal cooking temps. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(a)1] Several graters, chopper, and cheese slicer with small chunks of food dried onto food contact surface. Equipment food contact surfaces must be clean to sight and touch. COS: Items rewashed. CFSM notified of what to look for. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(g)] Employee actively prepping food in the back at the vegetable station wearing a bracelet. Front counter service employee preparing food wearing a non approved ring. Except for a plain ring such as a wedding band, food employees may not wear jewelry on their hands and arms while preparing food. COS: PIC asked employees to remove their jewelry. Corrected On-Site. New Violation. 13A Violation of Code: [511-6-1.02(1)(d)] Inspection report displayed was not the most recent. Food service establishments must display the most recent inspection report in public view at all times. New Violation.
